Gazpacho
A refreshing way to enjoy those tasty summer veggies!
Serves 6
3 cups tomato juice
2 1/2 cups finely diced tomatoes
1 cup red or yellow bell pepper
1 cup diced cucumber
1/2 cup salsa
1 clove garlic, chopped
1 avocado (optional)
1/2 cup cilantro or basil
combine all ingredients in a large bowl. Mix well. Cover. Chill at least 1 hour or up to 24 hours before serving. If using avocado, add just before serving.
Easy Rhubarb Upside Down Cake

This is a simple way to add pizzaz to a boxed cake mix!
Filling:
Grease a 9 by 13 inch cake pan
Sprinkle brown sugar across the bottom of the pan
add chopped rhubarb
Mix a standard yellow cake mix according to directions on the box
Bake according to directions. Allow to cake to cool, then flip cake onto a platter. Voila!
Caramel Rhubarb ‘n’ Dumplings

This is a great way to utilize that early season favorite: rhubarb!
Filling:
1 ¼ C - water
¾ C - packed brown sugar
¼ C - granulated sugar
3 Tbsp. - cornstarch
3 Tbsp - margarine or butter
3 C - sliced rhubarb
Dumplings:
1 ¼ C - flour
¼ C - granulated sugar
¼ tsp - salt
1 ½ tsp - baking powder
¼ C margarine or butter
1/3 C milk
Topping:
2 tsp - granulated sugar
¼ tsp - cinnamon
In a 2-qt microwavable casserole combine first five filling ingredients: water, brown sugar, sugar, cornstarch, and margarine or butter. Add the sliced rhubarb. Microwave uncovered on high power for 7 to 9 minutes, or until mixture is thick and bubbling, stirring after every minute. Cover casserole to keep warm.
Meanwhile, mix dumplings by combining flour, sugar, baking powder salt. Melt the ¼ cup butter and mix with milk. Mix into dry ingredients just until blended. Drop dumpling batter by rounded tablespoons onto hot rhubarb mixture. Cover the casserole and microwave 5 to 6 additional minutes, or until dumplings are firm. Turn the dish halfway during cooking if necessary.
Stir together the 2 tsp sugar and ¼ tsp of cinnamon to sprinkle over the top. Serve warm.
Makes 8 servings. 318 calories, 11g fat.
